Bruschetta
This appetizer is easy to prepare and popular at parties. Fresh, ripe tomatoes are preferable. Otherwise, substitute with sundried tomatoes.

A small amount of extra virgin olive oil adds flavor and texture.
Eliminate the Parmesan cheese used in traditional recipes.

Makes 24 slices

Ingredients:
4 large ripe tomatoes, finely chopped (or 1 cup sundried tomatoes)
1 tsp. olive oil
2 cloves garlic, peeled and finely chopped
2 tbsp. onion, finely chopped
8 fresh basil leaves, chopped into fine strips
1/8 tsp. salt, freshly ground pepper to taste
24 1/4-inch thick French bread slices (1 long, thin baguette)
Olive oil cooking spray
Fresh basil leaves for garnish

Core fresh tomatoes and chop finely. If you use sundried tomatoes, soak them in boiling water. Drain and chop coarsely with a knife or in a food processor. Transfer to a medium bowl and add oil, garlic, onion, basil, salt, and pepper. Mix well and set aside.

Place sliced bread on an ungreased cookie sheet. Spray lightly with olive oil cooking spray. Broil for 1 to 2 minutes, or until golden brown. Spoon approximately 2 teaspoons tomato mixture onto the toasted side of each bread slice and spread evenly.
