Salmon Tartar on Pumpernickel Triangles
Healthier and lower in fat than traditional steak tartar.
♥ Use fresh salmon (which is high in omega-3 fatty acids – good fat), instead of sirloin (which is high in saturated fat – bad fat).
Makes 24 slices
Ingredients:
1 pound fresh salmon filets
1-1/2 tbsp. fresh lime or lemon juice
2 tsp. capers, chopped
2 tsp. shallots, minced
1 tsp. fresh dill, minced (or 1/2 tsp., dry)
6 slices pumpernickel bread (or toast), trimmed and cut into triangles
Fresh dill sprigs to garnish
With a sharp knife, peel back and cut off any skin and brown flesh from salmon. Discard trimmings and any bones. Chop pink flesh. In a bowl, mix salmon, lime or lemon juice, capers, shallots, and dill. Mound one heaping teaspoon of salmon tartar onto pumpernickel or toasted bread triangles. Garnish with dill sprigs and serve immediately.
