Fresh Fruit Syrup
Summer-sweet, fresh-picked and high in vitamins and antioxidants, seasonal berries make an excellent syrup for French toast, waffles, and pancakes.
Makes 2 to 3 servings
Ingredients:
2 cups fresh strawberries (strawberries, blueberries, raspberries or blackberries work best), or thawed frozen unsweetened berries
1 to 2 tbsp. fresh orange juice (or water)
1 tbsp. sugar, less is best.
Wash and hull strawberries. In a small saucepan, combine all the ingredients and bring to a boil. Lower the heat and simmer gently until the berries are soft and the syrup is thickened and reduced to one-half in volume, 10 to 15 minutes (or longer for a thicker syrup). Allow to cool before serving. This can be made in volume and stored in an airtight container in the refrigerator.
